Others call it the “Superfood of the New Millennium.” Emu is a great tasting (97% fat free) red meat, low in cholesterol and high in protein and iron. Recent results from a study of alternative red meats by the University of Wisconsin-Madison (UW-M) confirm early reports, finding emu lower in fat and higher in protein and other nutrients when compared with bison, venison, elk and ostrich. Additional comparisons found emu meat lower in fat than chicken, turkey, pork and beef. Emu, being low in fat, translates to reduced caloric content. Cooking in tact cuts of meat causes primary moisture loss, concentration all other nutrients present. UW-M analyses found that Emu, ostrich and bison had selenium levels higher than beef, turkey and other meats. Emu also contains some of the B vitamins (thiamin, niacin, riboflavin B-6 and B-12) higher than most meats. The UW-M study compared the types of fatty acids in alternative red meat species versus other meats and poultry and found Emu (25%) and ostrich (30%) meat are lower in percentage of saturated fatty acids and are on par with chicken (28%) or turkey (26%).
